What Does the Future of Protein Look Like? Young Researchers Sought the Answer at a Workshop

On April 26, 2025, the Symposium on Sustainable Food and Innovation was held at the Faculty of Food Technology and Biotechnology, under the theme “From Farm to Fork.” The project was created with the aim of connecting students of biotechnical and related sciences and presenting innovations in the food industry and sustainability.

As part of the symposium, a thematic workshop organized by EIT Food Hub Croatia, titled “Protein Diversification: Sustainable Sources and Innovations in the Food Industry,” was held. The workshop was led by Assoc. Prof. Dr. Tomislava Vukušić Pavičić and Helena Habdija.

From Snacks to Insects

Through dynamic lectures and group work, participants explored alternative protein sources—from plants and microalgae to insects. They had the opportunity to see mealworms and crickets live, discuss consumer perceptions, and test their own attitudes toward “unusual” foods through a game of Bingo.

Working in teams, participants then developed their own alternative protein-based products: from Caulifera, a smartly packaged flour blend, to Sportella, a crunchy snack for athletes made from chlorella and mushrooms. They learned how to connect a product with emotions, develop a communication strategy, and convincingly pitch an idea.

They advanced their understanding of sustainable technologies and gained confidence in addressing challenges within the food system. And no less importantly—they learned how food can be a tool for change.
